Quinoa & Avocado Bowl
Ingredients
SERVES: 1
{Quinoa Avocado Bowl}
1/2 cup fresh arugula (any lettuce will work)
1/2 cup tri-coloored quinoa
1/3 cup @sunsetgrown cherry tomatoes
1/4 cup diced cucumber
@amylufoods organic spinach & red pepper chicken meatballs
1/2 fresh avocado @avocadosfrommexico
Generous garnish of @maplebrookfarm feta cheese
2 tbsp homemade tzatziki sauce (recipe below)
2 tbsp homemade honey & lemon vinaigrette (recipe below)
Salt & pepper to taste!
{Homemade Tzatziki Sauce}
2 large tbsp plain Greek yogurt @fage
1/4 cup finely chopped dill
1/4 cup finely diced cucumber
2 tbsp parmesan cheese
Juice from 1/2 lemon
Salt & pepper to taste
{Homemade Honey & Lemon Vinaigrette}
3 tbsp extra virgin olive oil
Juice from 1 lemon
1 generous tbsp dijon mustard (per preference)
1 tbsp honey
Pinch of garlic salt
Salt & pepper to taste
Instructions
Start by bringing 4 cups of water to a boil
Once boiling, add bag of tri-colored quinoa and stir occasionally until all of the water is soaked into the quinoa and set aside
Next, dice up tomatoes, cucumbers, and fresh dill and set aside
Add chicken meatballs to a plate and microwave for 1 minute (follow instructions on package if you buy a different brand)
In a small bowl, add all ingredients for tzatziki — mix together & set aside
In another small bowl or cup, combine all ingredients to make salad dressing — mix together & set aside
Once everything is prepped, plate your dish with all of the necessary ingredients, add tzatziki & dressing and enjoy!
