Nutrient Rich Taco Bowl

Ingredients

SERVES: 1

  • 1/2 cup roasted fajita veggies

  • 1/2 cup white rice

  • 3 oz seasoned flank steak

  • 3 tbsp homemade guacamole

  • Tortilla chips

  • Extra cilantro & lime juice to garnish (optional)

 

Instructions

  • Start by adding 1 cup rice to rice cooker & setting aside to cook

  • Next, slice 3 tri-colored bell peppers & 1 large white onion into small pieces

  • Sauté the peppers & onions on the stovetop over medium heat with extra virgin olive oil, salt & pepper until they are cooked to your liking (I like to cook mine until they are browned and soft)

  • While the veggies are cooking, assemble your homemade guacamole

  • Once complete, set fajita veggies & guacamole aside, and make your steak

    • Slice flank steak into small cubes and toss in your favorite taco seasoning

    • In a large pan, cook on medium to high heat until cooked through to an internal temperature of 145 °F

  • Lastly, assemble your bowl — garnish with some extra cilantro & lime juice (optional)

  • Serve with hot sauce and/or your favorite taco sauce and enjoy!
