Nutrient Rich Taco Bowl
Ingredients
SERVES: 1
1/2 cup roasted fajita veggies
1/2 cup white rice
3 oz seasoned flank steak
3 tbsp homemade guacamole
Tortilla chips
Extra cilantro & lime juice to garnish (optional)
Instructions
Start by adding 1 cup rice to rice cooker & setting aside to cook
Next, slice 3 tri-colored bell peppers & 1 large white onion into small pieces
Sauté the peppers & onions on the stovetop over medium heat with extra virgin olive oil, salt & pepper until they are cooked to your liking (I like to cook mine until they are browned and soft)
While the veggies are cooking, assemble your homemade guacamole

Once complete, set fajita veggies & guacamole aside, and make your steak
Slice flank steak into small cubes and toss in your favorite taco seasoning
In a large pan, cook on medium to high heat until cooked through to an internal temperature of 145 °F
Lastly, assemble your bowl — garnish with some extra cilantro & lime juice (optional)
Serve with hot sauce and/or your favorite taco sauce and enjoy!
