High Fiber Mediterranean Chickpea Salad

Ingredients

SERVES: 1

  • 1/2 cup lemon & herb couscous (link to recipe here)

  • 1/4 cup cherry tomatoes

  • 1/4 cup diced cucumber

  • 2 tbsp diced red onion

  • 1 oz kalamata olives

  • 1 scoop @Zoe Daily30+

  • 1 oz feta cheese

  • Fresh parsley to garnish

  • 1 tbsp Extra virgin olive oil

  • Salt & pepper to taste

 

Instructions

  • Start by preparing lemon & herb couscous (link to instructions here)

  • While that is cooking, chop cherry tomatoes, cucumbers, red onion, feat cheese, and parsley

  • Once the lemon & herb couscous is finished, add all ingredients into a bowl

  • I love a simple dressing (1 tbsp extra virgin olive oil + salt & pepper to taste) with a parsley garnish

  • Enjoy!
