High Fiber Mediterranean Chickpea Salad
Ingredients
SERVES: 1
1/2 cup lemon & herb couscous (link to recipe here)
1/4 cup cherry tomatoes
1/4 cup diced cucumber
2 tbsp diced red onion
1 oz kalamata olives
1 scoop @Zoe Daily30+
1 oz feta cheese
Fresh parsley to garnish
1 tbsp Extra virgin olive oil
Salt & pepper to taste
Instructions
Start by preparing lemon & herb couscous (link to instructions here)
While that is cooking, chop cherry tomatoes, cucumbers, red onion, feat cheese, and parsley
Once the lemon & herb couscous is finished, add all ingredients into a bowl
I love a simple dressing (1 tbsp extra virgin olive oil + salt & pepper to taste) with a parsley garnish
