Cilantro Lime Steak Bowl
Ingredients
SERVES: 1
3-4 oz. steak (flank or sirloin)
1 cup white rice
lime juice + zest (to taste)
fresh cilantro (to taste)
½ cup corn (I used frozen because easier)
1 tsp olive oil
~2 tbsp taco seasoning (low sodium)
salt + pepper (to taste)

Whole Grain Tostitos

Instructions
Start by seasoning sautéing steak — I coated the steak in extra virgin olive oil & then coated the steak with ~2 tbsp of taco seasoning
Cook steak to your liking over medium heat
While steak is cooking, add rice to rice maker or bring water to a boil to prepare rice on the stovetop
Sauté corn on the stovetop over medium-high heat with extra virgin olive oil, salt & pepper until charred
If using frozen corn like me, I added it to a bowl with water & steamed it in the microwave for 2 minutes. I then added the steamed corn to the pan to sauté
Finely chop cilantro to garnish
Assemble bowl & serve with whole grain Tostitos & salsa (optional)
