Cilantro Lime Steak Bowl

Ingredients

SERVES: 1

  • 3-4 oz. steak (flank or sirloin)

  • 1 cup white rice

  • lime juice + zest (to taste)

  • fresh cilantro (to taste)

  • ½ cup corn (I used frozen because easier)

  • 1 tsp olive oil

  • ~2 tbsp taco seasoning (low sodium)

  • salt + pepper (to taste)

{Other Optional Ingredients}

  • Whole Grain Tostitos

  • Salsa

 

Instructions

  • Start by seasoning sautéing steak — I coated the steak in extra virgin olive oil & then coated the steak with ~2 tbsp of taco seasoning

  • Cook steak to your liking over medium heat

  • While steak is cooking, add rice to rice maker or bring water to a boil to prepare rice on the stovetop

  • Sauté corn on the stovetop over medium-high heat with extra virgin olive oil, salt & pepper until charred

    • If using frozen corn like me, I added it to a bowl with water & steamed it in the microwave for 2 minutes. I then added the steamed corn to the pan to sauté

  • Finely chop cilantro to garnish

  • Assemble bowl & serve with whole grain Tostitos & salsa (optional)

  • Enjoy!
