Greek Chicken Bowl
Ingredients
SERVES: 1
3-4 oz. grilled chicken
1 cup white rice
Juice of 1 lemon
1 cucumber, chopped
1 cup cherry tomatoes
2 tbsp feta cheese
Homemade tzatziki: 3 tbsp Greek yogurt, chopped dill, 1 oz diced cucumber, pinch of garlic powder, parmesan cheese to taste
1 oz pistachios
1 tbsp olive oil
Oregano, salt, pepper, and Lakeshore Drive seasoning from The Spice House (to taste)
Instructions
Start by seasoning & sautéing grilled chicken — I coated the chicken in extra virgin olive oil & the above seasonings
Cook chicken to your liking over medium heat
While chicken is cooking, add rice to rice maker or bring water to a boil to prepare rice on the stovetop
Dice cucumber & tomatoes, combine, and drizzle with olive oil, salt, and pepper
Make homemade tzatziki by combining above ingredients in a bowl — I LOVE a lot of dill, so don’t be shy with adding lots of dill and diced cucumbers for extra flavor
Assemble bowl with all of your ingredients and enjoy!
