Greek Chicken Bowl

Ingredients

SERVES: 1

  • 3-4 oz. grilled chicken

  • 1 cup white rice

  • Juice of 1 lemon

  • 1 cucumber, chopped

  • 1 cup cherry tomatoes

  • 2 tbsp feta cheese

  • Homemade tzatziki: 3 tbsp Greek yogurt, chopped dill, 1 oz diced cucumber, pinch of garlic powder, parmesan cheese to taste

  • 1 oz pistachios

  • 1 tbsp olive oil

  • Oregano, salt, pepper, and Lakeshore Drive seasoning from The Spice House (to taste)

 

Instructions

  • Start by seasoning & sautéing grilled chicken — I coated the chicken in extra virgin olive oil & the above seasonings

  • Cook chicken to your liking over medium heat

  • While chicken is cooking, add rice to rice maker or bring water to a boil to prepare rice on the stovetop

  • Dice cucumber & tomatoes, combine, and drizzle with olive oil, salt, and pepper

  • Make homemade tzatziki by combining above ingredients in a bowl — I LOVE a lot of dill, so don’t be shy with adding lots of dill and diced cucumbers for extra flavor

  • Assemble bowl with all of your ingredients and enjoy!
