Roasted Red Pepper Turkey & Pesto Sandwich
Ingredients

Base of avocado chickpea spread (see below)
1 medium heirloom tomato
Deli turkey slices
Roasted red peppers
Fresh arugula & micro green mix
2 tbsp Trader Joe’s vegan kale pesto
2 tbsp balsamic glaze
{Avocado Chickpea Spread}
1/2 cup chickpeas - fiber
1 tbsp mayo
1/2 fresh avocado - fiber
Drizzle of olive oil
Pinch of flaky salt
Instructions
Begin by toasting your ciabatta bread on the stovetop for ~4 minutes to get it crispy
Next, in a small bowl mash together chickpeas, mayo & avocado to make your spread
Once mashed, spread onto base of sandwich, assemble remaining ingredients & enjoy this fiber packed delicious lunch!
