Roasted Red Pepper Turkey & Pesto Sandwich

Ingredients

{Roasted Red Pepper Turkey & Pesto Sandwich}

  • Base of avocado chickpea spread (see below)

  • 1 medium heirloom tomato

  • Deli turkey slices

  • Roasted red peppers

  • Fresh arugula & micro green mix

  • 2 tbsp Trader Joe’s vegan kale pesto

  • 2 tbsp balsamic glaze

{Avocado Chickpea Spread}

  • 1/2 cup chickpeas - fiber

  • 1 tbsp mayo

  • 1/2 fresh avocado - fiber

  • Drizzle of olive oil

  • Pinch of flaky salt

 

Instructions

  • Begin by toasting your ciabatta bread on the stovetop for ~4 minutes to get it crispy

  • Next, in a small bowl mash together chickpeas, mayo & avocado to make your spread

  • Once mashed, spread onto base of sandwich, assemble remaining ingredients & enjoy this fiber packed delicious lunch!
