Sweet & Savory Loaded Sweet Potatoes
Ingredients
SERVES: 1
{Savory Sweet Potato}
1 large sweet potato
1 tsp extra virgin olive oil (for roasting)
½ cup cottage cheese
2 tbsp sun-dried tomatoes
¼ raw cup walnuts
Drizzle of balsamic glaze (~1 tbsp)
1 tsp flaky salt (halved – one for roasting & one for topping)
1 tsp crushed red pepper
{Sweet Sweet Potato}
1 large sweet potato
½ cup Greek yogurt
1 small banana
¼ cup walnuts
2 tbsp raw honey
1 tsp ground cinnamon
1 tsp extra virgin olive oil (for roasting)
Instructions
Start by roasting both sweet potatoes
Poke holes into potato skin so heat can enter potato
Coat outside of sweet potato skin with extra virgin olive oil & sprinkle with salt
Throw both sweet potatoes into air-fryer at 400F for ~30-40 minutes
Once roasted, slice sweet potato open, add the remaining ingredients into the center of the sweet potato in whichever order you’d like & enjoy both sweet & savory flavors!
