Sweet & Savory Loaded Sweet Potatoes

Ingredients

SERVES: 1

{Savory Sweet Potato}

  • 1 large sweet potato

  • 1 tsp extra virgin olive oil (for roasting)

  • ½ cup cottage cheese

  • 2 tbsp sun-dried tomatoes

  • ¼ raw cup walnuts

  • Drizzle of balsamic glaze (~1 tbsp)

  • 1 tsp flaky salt (halved – one for roasting & one for topping)

  • 1 tsp crushed red pepper

{Sweet Sweet Potato}

  • 1 large sweet potato

  • ½ cup Greek yogurt

  • 1 small banana

  • ¼ cup walnuts

  • 2 tbsp raw honey

  • 1 tsp ground cinnamon

  • 1 tsp extra virgin olive oil (for roasting)

 

Instructions

  • Start by roasting both sweet potatoes

    • Poke holes into potato skin so heat can enter potato

    • Coat outside of sweet potato skin with extra virgin olive oil & sprinkle with salt

    • Throw both sweet potatoes into air-fryer at 400F for ~30-40 minutes

  • Once roasted, slice sweet potato open, add the remaining ingredients into the center of the sweet potato in whichever order you’d like & enjoy both sweet & savory flavors!
